Braised Lobster with Egg and Pork

3 Lobsters
2 Eggs
115 grams Lean pork
1 teaspoon Ginger, chopped
1 Spring Onion
2 tablespoons Sherry
1 tablespoon Soya sauce
1/2 teaspoon Salt
1 teaspoon Sugar
1/2 tablespoon Corn flour
3 tablespoons Water


  1. Clean and cut the lobster lengthwise and then into 1 inch sections with shells on.
  2. Fry in lard and salt over a high fire for 2 minutes. Add shredded pork and further fry for two minutes.
  3. Beat the eggs and mix thoroughly with the remaining ingredients.
  4. Steam the mixture in a very thin steam over the lobster in the pan, stir and toss over high heat for three more minute.
