Braised Lobster with Egg and Pork

Ingredients
3 | | Lobsters |

2 | | Eggs |
|
115 grams | | Lean pork |
|
1 teaspoon | | Ginger, chopped |
|
1 | | Spring Onion |
|
2 tablespoons | | Sherry |
|
1 tablespoon | | Soya sauce |
|
1/2 teaspoon | | Salt |
|
1 teaspoon | | Sugar |
|
1/2 tablespoon | | Corn flour |
|
3 tablespoons | | Water |
|
Preparation
- Clean and cut the lobster lengthwise and then into 1 ½ inch sections with shells on.
- Fry in lard and salt over a high fire for 2 minutes. Add shredded pork and further fry for two minutes.
- Beat the eggs and mix thoroughly with the remaining ingredients.
- Steam the mixture in a very thin steam over the lobster in the pan, stir and toss over high heat for three more minute.
